PREPARATION: Fancy French Omelettes
- Prepare fillings and set aside in small bowls (quantities for ONE omelette)
- grate cheese. ( ¼ cup)
- chop herbs (1-2 Tbsp)
- chop veggies into quarter sized pieces. (approx. ¼ cup)
- chop ham into half inch squares. (approx. ¼ cup)
- grate cheese. ( ¼ cup)
- Whisk together three eggs and approximately ¼ cup water with chopsticks.
- Prepare pan by melting butter (2 Tbsp)
- Sauter veggies until soft (approximately 3-4 minutes) if you are using them and set aside.
- Pour the whisked eggs mixture into the pan over medium heat.
- Gently twirl the pan over the heat so the omelette starts to set. Gently scrape cooked egg from the sides as you go, so all liquid sets.
- Add desired ingredients quickly, spreading evenly over egg mixture.
- Fold omelette in half in pan with spatula.
- If you like “baveuse” - a runny omelette, remove from pan NOW!
- If you prefer eggs more well done “bien cuit”, leave in until all liquid is cooked.
- Add salt and pepper to your preference.
- Cut in half and share with a friend!
