Gorgeous Gougeres (Fancy French Cheese Puffs)

French Gougeres

Ingredients            Makes around 36 gougeres

1 cup grated Swiss or Gruyere Cheese
1 cup water
5 Tablespoons Butter
1 tsp salt
¼ tsp ground pepper
¼ tsp ground nutmeg
1 cup flour
5 large eggs
Oil to grease pans

1)Preheat oven to 425 deg. Grease cookie sheets with oil.
2) Grate the cheese and set aside.
3) In a medium size saucepan, bring the water, butter, salt pepper and nutmeg to a boil. When butter has melted, remove from heat.
4) Add the flour to the butter/water mixture and beat with a wooden spoon until mixture leaves side of the pan clean.
5) Add cheese and beat until incorporated. Beat in 4 eggs BUT one at a time until thoroughly absorbed. Beat until mixture is smooth, shiny and firm.
6) Drop by small spoonfuls onto greased cookie sheet. Bake in upper third of oven for about 15 minutes or until golden and doubled in size. Remove and serve.
