Cooking the Pasta
Optional:
Start the Water!
- Fill pasta pot ¾ full of water.
- Add a dash of salt.
- Leave it until ready to cook pasta.
Making the Dough
- Pour a pile of 1½ cup flour onto the counter.
- Make a well in the middle of the pile.
- Crack two eggs and pour them into the middle.
- Break the yolks and slowly mix in the flour with your hands.
- Continue mixing until the flour and egg are a thoroughly mixed dough.
Making Fettuccine
- Divide your dough approximately into quarters.
- Dust it lightly with flour.
- Roll into a ball and flatten.
- Slowly feed it into the pasta maker on its lowest setting (zero).
- Fold it in half and feed through again.
- Change the setting to 1 and feed it through again.
- Continue to move the settings up on the pasta maker
- After the final setting, put the fettuccine setting on the machine.
- Feed the dough through slowly.
Making Cavatelli
- Divide dough into long tubes about the diameter of your pinkie.
- Cut into tubes about the length of your thumb.
- Push your thumb into the tube and push forward and up to create the shape.
- Dust all the cavatelli lightly with flour.
Cooking the Pasta
- Turn the heat for the pasta water up to high.
- Once it is boiling, add the pasta.
- Cook the pasta for 1-2 minutes- fresh pasta does not need long to cook!
- Pasta will rise to the top when it is ready.
- Serve with butter, parmesan and fresh ground pepper.
Optional:
- Heat some sauce to add to your pasta.
